Holten Meat introduced a stringent HACCP system in our processing facility years before the USDA mandated it for large plants. Our statistical process controls for microbiological testing, coupled with third-party reviews for additional safety assurance, paved the way for a seamless transition to USDA authorization. Today, Holten operates a federally inspected facility under the supervision of several USDA inspectors and we have consistently surpassed USDA requirements.
From the moment raw materials arrive at our temperature-controlled receiving dock, we commit ourselves to strict quality-control standards. Raw meats are tested for freshness right at the dock, then immediately sent for extensive analysis. We staff our processing equipment - the most modern offered in the industry - with Quality Control personnel at every stage of the production cycle. Holten inspectors continually sample product from the production process for testing in our on-site Quality Control Laboratory. At the end of every production day, a professional cleaning crew disassembles our entire facility, cleans and sanitizes in accordance with strict guidelines, and reassembles equipment to ensure safe food production the following day.
Our quality commitment features an innovative refrigeration systems that monitors the entire building 24 a day, seven days a week for temperature and food safety concerns. Holten also conducts supplemental bacterial analysis on all incoming raw materials, as well as finished products. Our rigid in-house Quality Control testing gives us 100% confidence in the safety of every piece of meat we process.
